Would it be possible to make something like the gyro-gimbal device shown in this image, substituting a ball on one side of the inner axis where part of the disk is, and could it be made to simulate maybe the a, x and y spins?

At three spins, the "ball" would not be on the inner disc. A nested gyroscope lacks the degrees of freedom of stacked spins, since they all share a central axis pivot point. Stacked spins do not share a central pivot point. So this device isn't really analogous to stacked spins. Similar concept, but this one is mechanically bound to an axis and stacked spins are not.

I should qualify that last comment. The gyroscope you're talking about is mechanically bound to its central axis, the stacked spins are kinematically bound to their axes.
